Low-heat commercial dishwashers don’t get hot enough to sanitize with each wash, so they rely on chemical sanitizers. Many dishwashers will leave a chemical residue on their dishware after the washing cycle is over, which can affect your customers’ eating experience. Hobart low-heat dishwashers combat this with a feature called PuriRinse. It runs a low-temperature stream of water over the dishes to wash away any remaining chemicals. One of the benefits of commercial washing systems is that they can come with high-heat options. A high-heat dishwasher raises the temperature of the washing water to over 180 degrees, which is high enough to sanitize everything it washes. In 2010, they introduced a new line of energy efficient dishwashers called “Advansys.” These dishwashers have an innovative design to make dishwasher more energy efficient. Their ventless system catches the steam rising from your newly-cleaned dishes, and it forces the steam to the water intake. A fan blows the hot steam over heat exchange coils, filled with water anywhere from 50 degrees to 80 degrees. When the steam passes the coils, the difference in temperature causes the steam to condense and the water inside the coils to heat up. While most dishwashers need to be filled with hot water, the energy recovery system heats cold water as it enters the reservoir. Instead of using electricity to heat water, the steam does it for you. Advansys technology doesn’t just save energy; it also saves water. Hobart undercounter dishwashers and door-type dishwashers typically use a paltry .74 gallons of water. Combined with energy capture and water savings, this warewashing system is as good for the environment as it is for your wallet. Hobart claims this will save a kitchen up to $1,500 a year in energy costs in an existing kitchen. New kitchens can save $5,000 in their first year because the washers do not need expensive venting systems. In their conveyor and flight units, Hobart uses “Opti-Rinse,” which uses larger drops of water than most rinsing systems. Larger droplets retain and transfer heat better than smaller drops, so you use less energy and less water. At the heart of every good restaurant is a dishwashing system.
